Summer Refreshing, delicious and so pretty -  

 Watermelon mint feta salad

...a treat! 

Cut two cups of watermlon is bite size cubes

 1/2 cup of crumbled feta

1 tablespoon of chopped fresh mint

1 tablespoon of light olive oil

spritz of lemon juice

Toss and let stand at least an hour to let the flavors meld together.  Serve chilled

    Legend - Color Code

          Include a Brown, Tan and one or two of the vegie colors in each meal. Use different vegie colors throughout the week.

  Brown = Protien

    Tan = Carb

    Green =  A green Vegies or Fruit

Entree Protein

fat, high fiber in your frozen food section - easy and fast to add to recipes or mircowave to eat alone or with a dipping sauce - Sweet-N-Sour or mustard sauce is delicious, but, choose your own favorite!

Just put in the mircrowave for a minute and they are ready!

                                                               With this Black Bean Rice Burrito you get both the protein and carb  - you have a complete meal here with the watermelon! It's easy to make the Burrito 

In skillet over low heat add 2 cups cooked rice (brown recommended)

Add 1 can (15.5 oz) Black Beans (we like Organic)

1/2 cup of Salsa (or more) 

Sprinkle Tablesppon of chopped fresh cilantro  

Spritz lime juice to taste  

When cheese is melted place in tortilla

Garnish top of tortilla with sour cream if desired
